say you set pit at 225F and meat at 160F.
When meat reaches to 160F, the fire will be controlled by meat probe and maintain meat at 160F for T minutes. Naturally during this period pit must be lower than 225F.
Power source: 12VDC 2 to 6 amps AC/DC adapter, or 12 VDC 2 a.h. or bigger battery
