If you bought the flat at the Dothan or PC Sam's, it is well trimmed already.
Only thing to be sure of is to wrap it at 160ish or so with lots of broth or other liquid a give it a good rest.

Your right Tim, I have been missing in action. I have been cooking at home, just no comps. Just don't have much time for them the way I work. I have too many hobbies, hunting, fishing, etc. Hope you are doing well, and thanks for the tip on the beef brisket. Take care friend.
