Great looking brisket Bo, High Heat briskets are great and fast, it usually takes me around 4-5 hrs max, have never had one go over 5 hrs regardless the size. I use mesquite wood for beef its the best for beef imo. I also tightly wrap my briskets in foil, have never tried the pan method.
