Default China Style Smoked Beef

China style beef.
3 Kg beef, brined over night by rice liquor ,salt,onion,ginger,garlic, black pepper, and chinese fragrant.
smoked at 110C for 8 hours.
over well done, a little dry. But it is my favorite flavor.
In China we eat beef always well done.
