I assume you are talking about a temperature probe that you leave in the butt? If so, to me it is only a guide to get to the approximate temperature of doneness. I then hand probe all over to find when the probe easily slips in.
That being the case either from the side or from the top work about the same.
I used to foil after the stall but now I only foil to rest and hold.
