For my Carnival Food TD I thought I'd do some turkey legs, I love these things and they come equipped with their own stick.

I injected them with some creole butter, this was FUN! They just plumped right up before your very eyes (Guerry thought I had a little too much fun with this part)

Then they were placed into a vacu-bag with the rest of the creole butter for a few hours.

They were generously dusted with Todd's Bayou Dirt then onto the grill...

Finishing off with a little direct heat.

We'll take six please!

These were sooo juicy and had a great kick...of course we were already stuffed with gyros but it was hard not to nibble, a lot!
