OK, so I've NEVER tried to make my own recipe. EVER.
After inquiring a while back about a baked bean recipe, I decided to make my own, which is technically a hybrid of 2 or 3 different recipes I found, with a couple of my own additions.
I've tweaked these and I think they're done. These baked beans are off the farkin HOOK!!!
I'd love for some of you to try them out and let me know what you think. I'm not typically a baked bean guy, but these are good.
Wampus's Peach Bourbon Baked Beans
1 lg can (1 lb, 12 oz) of Bush's Baked Beans
4 slices of thick sliced bacon, chopped
1 lb maple fatty (smoked ahead of time), crumbled/diced
1 med onion, diced
1/2 bell pepper (I like orange or yellow)
1 can (21 oz) peach pie filling
1/2 cup brown sugar
1/2 cup Famous Dave's Apricot Bourbon BBQ Sauce
2 TBS worschestershire sauce
1/3 cup bourbon
1 lg clove garlic, minced
2 TBS yellow mustard
1 TBS rub
-Smoke Fatty (can be smoked well before), crumble or dice
-Brown Bacon in skillet (about 1/2 way)
-Add onion & pepper - cook until just carmelized
-Slowly add bourbon & garlic - simmer until caramelized
-Remove from heat
-Add remaining ingredients to skillet, mix thoroughly
-Put in pan and place in smoker
-Smoke for at least 2 hours, stirring occasionally
The only thing that I may or may not change is to use cooked pinto or navy beans instead of baked beans. When I originally tried this I tried soaking raw pintos, but didn't do it correctly and the beans were very tough. The flavor was perfect, but the beans were tough. Today I did it with Bush's Baked beans and I'm just not sure if the sugar, molasses, etc that's already in the baked beans is too much and if it would be better with just regular canned pintos.
ALTHOUGH....I did them this way tonight and I gotta tell you.....the DID NOT SUCK!!!
The bourbon and the Famous Dave's sauce give them a unique flavor.
