Well, I pretty much like anything with chile's in it. So, here is my version of a chile relleno fatty in a bacon weave....
It took all my equipment to get this done today. I charred the peppers on the BGE and cooked the fattie on the UDS
Love the smell of those peppers..... oh,yeah!
Got the bacon weave done and the sausage out on top. Gave a sprinkling of The Rub Company's Santa Maria Style rub.
Then add some sliced pepper jack cheese, pasilla peppers and jalapenos
On about 90 minutes at 275
Slather on some Big Butz Hot and cook till setup
Then slice some of that tasty heaven. OMG!!
That came out at least as good as I expected. So many flavors hit the tongue. Wow!
