Not sure if I mentioned in the post but the 30 minute rise is just the fastest way to do this, you can also skip the warming drawer & leave this on the countertop & it will double in anywhere from 2 - 4 hours, & can be left out all day for that matter & will be fine. I sometimes make it in the morning & don't fire up the egg till dinner time, it stays pretty well for maybe 8 hours sitting out, so it's pretty flexible that way... of course if it's hot & humid in the house that'll speed things up & it will get pretty droopy over a long period of time
