I have an Extreme BBQ Trailer (8.5 x 22') that I had James build for me last summer. Although my primary use was for comps I made sure to have it set up properly for vending (vending window, 3-bay sink w/drainboards, etc.) in case I ever went down that road.

Yesterday I had the Health Department inspector certify my trailer for use in mobile food concessions. The inspector was very impressed! He made a comment that my trailer was one of the finest that he's inspected in a long time. I had been warned that this guy was very thorough, which didn't have me worried since I knew I had everything in order. To be honest he spent more time talking vending strategies with me than he did inspecting the trailer. I think once he saw the trailer he knew it was all in order.
