Grilled Salmon Cakes
For my ground meat I thought I might try the other red meat. Salmon. I’ve had some in the freezer that I got from Restaurant Depot awhile back. It wasn’t that great so I figured I couldn’t hurt it much.
I ground the salmon on my Kitchen Aid, just one time through with the large holes.
Then I mixed in a little mayo, some chopped fresh basil, 4 green onions, and 4 tablespoons of bread crumbs. To that a little Crystal hot sauce and some EVOO. Almost forgot, a splash of Teriyaki.
This made a nice mix, so I formed it into 4 cakes and added some Planko bread crumbs on the outside. Put it into the fridge to firm them up.
Next onto the Performer over hot coals with a fish grate so they didn’t fall through. It was really dark so this pic is real bad, but I think you can see it is on the grill.
Just a simple dinner, Salmon Cakes with Zucchini and yellow rice. Chris please use this next photo.
Well all I can say is that these were very tasty. Firm but not too dry, and the planko made them nice and Krispy.
Sharon, Bless her sweet little heart, had just had salmon cakes last week while we were dining out. She thought mine were the best she had ever had. In fact she asked if she could write a review for you all.
But, as always, she is busy, so you will have to just take my word for it.
It's good to be back, even if only for a short time. The remodel job is close to being finished. And at my age I hope I never have to do another. Yeah right, like this will be the last one she ever asks me to do.
