Well, in my home when I was growing up, nothing said delicacy like ham. I took a small shankless 7 pound picnic and smoked it with apple wood at 250 to 160 internal. I give you the ham in it's uncut glory. I glazed it the last 20 degrees with Texas Pepper Jelly's pineapple habanero mixed with honey and pomegranate balsamic vinegar. Pic number two for the TD.
