Permanent water pan, not a big fan of pans full/half full of renderings and water after a cook to have to deal with getting out without a big mess. There will be a valve for draining and looking at an optional valve to fill as needed. Unit is completely surrounded (tops, sides & bottom) with 2" high temp insulation and is a vertical style. I can't give away much more
