Great thread Boshizzle. I am very new to smoking and have been experimenting with temps, meats and time. I agree with you on the VARIABLES. I have found that changing one variable while trying to duplicate the same recipe can have almost disastrous effects. but as you said "there are no substitutes for practice" so its off to the store to buy some Chuck Roasts (awesome idea) to practice on.
