This is the rub I use...
3 tablespoons Kosher salt
1 tablespoon granulated garlic
1/2 teaspoon dried parsley
1/4 teaspoon black pepper, medium grind
I do a reverse sear on mine...smoke with oak @ 250-275 to an internal temp of 120 then directly to the coals for 3-4 minutes per side to an internal of 135 ish...
