I forgot to add the flour tortilla recipe...
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
mix well then add
1 Tablespoon of lard (or shortening)
mix well then add
1/2 to 3/4 cup of warm water
I start with 1/2 cup of water, then mix in more if needed.
Knead into a ball and let it rest for 10 to 15 minutes
Tear off balls of dough and roll out to 7" rounds. The recipe makes 12 tortillas but I like mine bigger so I usually make 8 or 9 with one batch.
Cook on a hot griddle or cast iron skillet for a minute or so on a each side.
Store the tortillas in a plastic baggie until all are cooked.....they will stay nice and pliable that way. :)
They are easy to make and so tasty when they are hot off the griddle.
