Nice report. As with any cooker, minimize the the time you leave the lid off. Once the flame gets going due to the suddenly increased airflow, it takes time to rein the temps back. Even with a Guru, it's best to work quickly when you take the lid off for mopping / reseasoning etc.

And yes, photos of your mod would be great. We have that rule here - no pic, never happened.
