Merry Christmas Brethren! Here's A Famous Seasoning Recipe!
I know this is knowledge available to anyone who can use Google, but I thought I would share it anyway. For anyone not familiar with it Tony Chacheres Seasoning has become one of the biggest staples in Louisiana Cooking. You can hardly find a home down here that doesnt keep it on hand at all times. It almost replaces salt and pepper in some homes, and there are folks who almost literally put it on everything. The best tribute to it is the many many creole and cajun seasonings that have hit the market as a result of its popularity.
Here is the mixture from the original Tony C's cookbook. They removed this recipes from all printings after the seasoning hit the market. Feel free to leave out the MSG as they took it out of the commercial version years ago.
26 ounces salt
1 1/2 ounces black pepper -- ground
2 ounces red pepper -- ground
1 ounce garlic powder -- pure
1 ounce chili powder
1 ounce Monosodium glutamate -- (Accent)
The measurements came about as a result of Chef Tony mixing entire store bought containers of the ingredients. So thats why its in ounces instead of typical units of measurements.
