The Rub Co. Santa Maria Style Tri-Tip
 
The pregnant wifey was craving some tri-tip so I swung by the store on the way home and picked up a beauty. Trimmed it up and gave it a healthy coat of The Rub Co. Santa Maria Style Rub. Cooked direct for most of the cook to build a nice crust and pulled at 135 degrees. Doesn't get much better than a nicely done tri-tip!!!

SmoothSmoke - Traditional Santa Maria Style tri-tip has a Santa Maria Style Rub (garlic & salt based) and cooked over red oak. Our Santa Maria Style Rub outsells our others 2:1. Very popular!

This is the rub I use...

3 tablespoons Kosher salt
1 tablespoon granulated garlic
1/2 teaspoon dried parsley
1/4 teaspoon black pepper, medium grind

I do a reverse sear on mine...smoke with oak @ 250-275 to an internal temp of 120 then directly to the coals for 3-4 minutes per side to an internal of 135 ish...:cool:

It's such an incredible piece of meat, absolutely my favorite cut of beef! Always tender & juicy!

Devious - hit up costco, or ask your local butcher to get you some, alot of times butchers dont know what to do with them so they go into the grind! :shocked:
