pork math.. go!

200 1 oz sample servings of pulled pork can be obtained by purchasing how many lbs of raw pork butt?

Bueller?

Bentley 09-07-2007 02:24 PM

25-30 lbs.

20.83# (assumes boneless to begin with)

200 oz = 12.5 #

Assuming shrinkage of around 3/5, you get 20.83# to start with

I would have used 60%, but same result.

There is a slight error here. If shrinkage is 3/5 (60%) then you need 31.25 lbs to begin with.

If shrinkage is 2/5 (40%) then 20.83 lbs would be correct.
