On the fence as to how and what to charge for requests for whole brisket. I have charged $10 a pound based on precooked weight. But after trimming and smoking I know the brisket has lost several pounds. What is the bbq standard for charging for meat by the pound? Before or after cooking??

After trimming and cooking you will find a 45% yield. Cost x 3 would be fair or you could weight it out and figure it but that's probably somewhere in the $19-$22 per lb range. At least here where I'm paying $3.80 for whole packers right now.
