Strube Ranch Brisket
I just ordered my first Strube Ranch brisket. It sounds like they aren't aged very long when they are shipped.
For those of you that have cooked them before, do you continue to wet age once you get them, or are you happy with them how they come?

I vote for a kill date to be added to all packers. Seems like this question comes up a lot.
