Ducks & Geese
 
I'm expecting a few Geese/Ducks from a hunt next week.

Buddy wants to smoke a few of them on the UDS, Anyone have any pointers?

Treat them like chicken or turkey. Use a drip pan. If necessary, you can crisp the skin using a hair dryer.

They have a ton of fat, so a drip pan is a must. Make sure you remove the shot! Steel BB's are not good eats.
