Chicken on my Hasty Bake
BBQ'd a spatchcocked chicken today on my recently acquired Hasty Bake Suburban flee market special. It turned out quite delicious -- much better than in my Mini WSM.

I used Hasty Bake brand lump charcoal ($6.29 for a 10 lb bag here in Tulsa)--minion method. I had the fire cranked up to just above bake (above the middle setting).

When the grill was of temp (about 325 or so) I threw in a handful of pellets directly onto the lump charcoal to get a little smoke going.

I used the grease drain bar and it worked like a charm keeping the flames from flaring up onto the chicken--I used no diffuser.

As they say, a good cook can make great food on anything. Glad it turned out well.
