Im gonna smoke my first chicken tonight on my new smoker. It will be my maiden voyage for chicken on a vertical water cooker. I usually just inject with creole butter and lightly rub with creole spice and olive oil the skin for crispness. All my experience is with an offset cooker so is there anything I need to know about a vertical water cooker when it comes to chicken?

Just remember that your thermometer is not stuck and don't keep opening the lid to check. Also, when you do longer cooks, you need to find something else to do instead of adding fuel every hour. :becky:
