17.5# Choice Angus Brisket. All trimmed and rubbed. Injected last night with
Better than Bouillon and Amesphos. Cooking today hot and fast. 300*-325*

Unwrapped and ready to be separated. Flat will get a 2hr rest. Point cut in to burnt ends. Point is real tender. flat temp out at 198+.
