This is bacon wrapped and smoked dove and pheasant. The dove is fresh, like 15 minutes previous. The pheasant is from Feb but still good!

I've been doing doves every other night!! Me and my boys are providing!!! I love them!! Just curiou how you cooked them? You said smoked? Like low and slow? One of my deals is the doves get too done waiting on the bacon to crisp...so...I do them REAL HOT on the weber kettle. Even leave the lid off and let that thin flare and roar! If you dont mind sharing your process...time/temp/cooker. Thanks!

They were on the smoker at about 250F for roughly an hour. There isn't a lot there to go slow with. I got them up to about 150F internal. Some of the bacon was crisp and some wasn't. I think a little hotter would work better on the next batch. I'm thinking 350F for I'm guessing 30 min. I'll post how it works. Now I just have to shoot a few more!
