Side dish serving size
 
In a casual restaurant setting with an a la carte menu where you buy whatever mains and sides you want separately, what size would the sides be, using volume measurement? My thoughts are to offer 2 sizes, the item is scooped into a paper or styrofoam cup in that size, like 4oz, 8oz.

I use a 6 oz cup for my sides. That comes with the sandwich. My question would be, why 2 sizes?

The concept is a takeout place, thinking to either offer a much bigger family type size, or a smaller increment as an upsell, like going from 4 to 6 or 6 to 8.

I'd keep things simple on the single serving size that people will be ordering with their meal. Upselling sides like a fast food chain does with fries isn't really necessary, and all it will likely do is force you to buy more containers, slow down ordering, and provide one more opportunity for mistakes to be made.

You can still offer different sizes though. Just keep the single serving size at 4 or 6 oz or whatever it is, and then offer bulk containers of say 1/2 pint, pints, and even quart containers that people can take home when feeding the family, etc.

That's how my menu is set up anyway.
