If you've got a beautiful steak, you really don't need anything else.

I like a good sauce with filets. My favorite is a mushroom peppercorn sauce.

salt, black pepper .... cook till done

then add some crushed dried oregano

and squeeze half a lemon over the top

Put Santa Maria seasoning on them: equal portions of salt, black pepper and garlic powder. Coat well and grill :) I really like the flavor of this rub for tri-tip and steaks.

1/2 a garlic head & bonemarrow gravy

Sauté some onions and mushrooms to serve with the steak.

If you aren't going for the carpaccio, then season with salt, pepper and crushed bay leaf and rest.
Take steel tongs and wave the steak over a candle.
Eat.

I know this is after the fact but if you want kick your steaks up a bit, try out a Chimichurri sauce.

I dont want to link one that doesnt support the site but you can google it and there are a ton of great recipes. Great for people who have a savory, tangy pallete.

So - what did you end up doing with those steaks?
