Finally a decent brisket cook
After getting a weber kettle and finding this site I have been trying to cook a brisket to perfection. Finally after about 6 or 7 tries I think I nailed it. Funny thing is I decided to just cook hot and fast because I waited till this morning to throw it on. I cooked about 315 on my wsm for 5 hours and it was ready.

Looks good to me! Nice smoke ring too. I 'll be over in a few minutes to give it the taste test.

Wrap some of that in a Flour tarpaulin and toss it frisbee style over the back fence I'll catch it:grin:
