Inspired by Sammy and Stargate, I decided I would make an attempt at smoking some meatloaf. Coincidentally, it seemed like a good time to clean out the fridge a bit. I had some onions, carrots, and sweet potatoes that I needed to use up. To this I added a pound or so of beef, some salsa, a big handful of oats, an egg, and salt and pepper. The Weber wanted to go at 290 today so I just let it do its thing for about 90 minutes. Put some BBQ sauce on and let it go for about 10 more and pulled at an IT of 155.
