I have only bean able to find Pork Belly at a couple of places. I think i need to find a place that has them with a better meat to fat ratio. Of course i want there to be some fattieness and marbling. The last one i got was from Jaspers Meat Co. they butcher the pigs right there but it just wasn't the quality im looking for in a belly. This essentially is for a Porchetta that is going to be used in competition.

I can look into it, my father in law also partner in crime suggested a trip to the elburn meat market. This is for the Glen Ellyn backyard bbq. We placed 11th in both meat categories and 4th in sauce last year and I'm trying to step our game, I'd like to be in the top 5 this year.

Go for it!
Reams in Elburn is excellent. The make their own bacon so I'm sure that their pork bellies are nice. I didn't suggest it since it was so far away.
