1:fire basket/ash box, adopted design from kamado smoker. All fresh air will contact charcoal in burning. There is much less excess by-pass fresh air like in traditional UDS, in turn a higher burning efficiency and big saving on charcoal. By introducing an ash box, cleaning is so easy.
2.By adding an umbrella or cover on fire basket, grease fire is avoided, safer and healthy.
3.lower grill is 12" deep in the drum, very easy to reach when doing traditional high temperature grilling.
4.You can also use skewer or meat hook like in PBC
5.All are made from stainless steel

I can simply add total 6 grills, each 2" apart in my UDS.
One fan for burning coal. On opposite side I will add second fan to blow in fresh air for drying food. I think the second fan shall be always on. The burning fan will be controlled by controller of Golden-DOG. It shall be good for making jerky.

First fire, efficiency is so great
I add 2" lining by ceramic clay on the bottom( not walls) this afternoon.
I bought much less clay than needed for walls
The clay was still wet and I lighted the pit at 13:45.
I used my controller of Golden-Tiger with 50 CFM fan.
First I used manual mode. In 10 minutes it reached to 160C(320F)
Then I turned it to automatic control and set target pit temperature at 150C(302F).It fluctuated a while and then stayed at 155C(311F).
At 16:00 I turned it to manual mode by mistake and when I found it and the pit reached to 190C (374F). I turned it to automatic again and changed target to 105C(221F). It droped to 105C around 17:30. and then kept at 105C, occassionally 104C. It is 23:30 now and it is still 105C.
I put in about 2 lbs charcoal(lump).
It is too late and I do not know how much charcoal is left.
I will leave it there and go to bed.
But one thing is clear, 2 lbs keeps the pit at >105C for 9.5 hours already.
and must be longer, I will lose final data.
I add one more fan adapter
One fan is for fire basket for burning
The second fan is for blowing in more fresh air for ventilation when dehydrating fruit/vegitable
Also I add 3 more stops for grill. Totally it will have 5 grills. More grills are used to do dehydrating or do jerky.
1.It is a UDS smoker
2.by removing umbrella, it is a common grill
3.by adding more grills and an extra fan it is a dehydrator
