Thanks for posting the thread on salting steaks. I had not done this for a while. It will always be done now. I got choice- 2 bone in rib eyes and a strip steak Went to aq good market- Wegmans and got these. Really lucked out with the ribeyes The butcher was just about to cut up a roast for steaks. Right out of the cyrovac. He cut and trimed them for me. My wife thought I was nuts salting them. Fired up the egg and grilled them at about 500-550. My wife and son raved about them. I prefer mine med rare these were medium that is the way they like it. May be the best steaks I have done so far. Thanks again
