Chivo Goat Leg Tacos

A friend of mine who is a farrier, also raises boer goats. He gave me some of the meat awhile back and I finally dug them out of my freezer and cooked them on the drum.

I made a marinade using
Garlic powder, paprika, pepper, rosemary, thyme..
also A1, worcestershire sauce, bufalo chipotle and water.

I coated the legs with the dry ingredients, then placed in a baggie and poured the liquid on top. Chilled in the fridge overnight.

placed in the BPS drum (with the marinade) at 275F with a kiss of mesquite.

made a batch of refried beans..

http://i245.photobucket.com/albums/g...ps5b77c8f9.jpg

parboiled some yuca root and fried the cubes in butter...

http://i245.photobucket.com/albums/g...psebfd143c.jpg

after 2 hours I added beef stock, foiled the meat until tender...

http://i245.photobucket.com/albums/g...psd8f819da.jpg

it was fall off the bone tender...

http://i245.photobucket.com/albums/g...ps5c242564.jpg

the meat was soooo tasty!!

http://i245.photobucket.com/albums/g...ps14b9b3f2.jpg

I made tacos that night...

http://i245.photobucket.com/albums/g...psd77dc015.jpg

http://i245.photobucket.com/albums/g...ps62a30548.jpg

then made goat meat huevos rancheros the next day...

http://i245.photobucket.com/albums/g...ps0e9f7ef2.jpg

and last night I made goat meat nachos for supper..

I have some of the meat left over, not sure what I will make next.

Really loved this. My favorite goat recipe is underground goat but this was just as good. Will make it again.

Thanks for looking!

Looks good. We have a place here in Austin called Texican cafe that has some fall off the bone tender cabrito. It seems to be steamed... really good, but doesn't have any smoke:( still, tons better than the Cabrito I have had in Mexico that is usually tougher since it's usually cooked over an open flame

Thank you Bob! I like yuca, kind of like a potato but has a sweetness to it too.

Thanks garzanuim! I like it steamed a bit too. The friend who raises the goats likes to fry strips in oil with peppers and onions and just eat it in a hot tortilla kind of like this... http://cowgirlscountry.blogspot.com/...y-outdoor.html
It's good beer drinking food.

Thank you Tony! Didn't need any with the goat meat drippings...and I tried something different with the nachos. Sprinkled them with smoked cheese, then a good bit of Slap Yo Daddy Chicken rub, minced scallions...then a squeeze of fresh lime juice. I loved it!
