Venison buck-n-bourbon and my first Serviettenknödel :)
I've been getting a lot of use out of the venison from this season..it's nice to have on hand.
http://cowgirlscountry.blogspot.com/...er-season.html http://www.bbq-brethren.com/forum/sh...d.php?t=149609 Made a batch of venison and bourbon on the drum and tried a batch of "napkin" noodles to go with it. A friend in Austria told me how to make them. This was my first try. I seasoned some of the cubed venison with salt and pepper, then floured and fried in bear lard. http://i245.photobucket.com/albums/g...ps79e29c80.jpg http://i245.photobucket.com/albums/g...psb01de19e.jpg http://i245.photobucket.com/albums/g...pscb044ed7.jpg http://i245.photobucket.com/albums/g...psa745b930.jpg onions and garlic.. http://i245.photobucket.com/albums/g...psd242e1ce.jpg bourbon.. http://i245.photobucket.com/albums/g...psd800b2c5.jpg added beef stock, marjoram, thyme, basil, smoked salt, cracked black pepper then onto the BPS drum to simmer.. http://i245.photobucket.com/albums/g...ps50c0173c.jpg The venison simmered until tender, about 5 hours http://i245.photobucket.com/albums/g...ps49da0ead.jpg made my Serviettenknödel milk, eggs, parsley, seasonings and bread cubes... http://i245.photobucket.com/albums/g...ps1f8514df.jpg http://i245.photobucket.com/albums/g...psce338109.jpg they are rolled into a kitchen towel but I used cheese cloth... http://i245.photobucket.com/albums/g...ps1555d718.jpg simmered until firm... http://i245.photobucket.com/albums/g...psd81b9e05.jpg then sliced... I fried some in butter too, they were pretty tasty. :) http://i245.photobucket.com/albums/g...ps8b6e3f52.jpg venison buck-n-bourbon with napkin noodles... http://i245.photobucket.com/albums/g...ps8358d403.jpg It was pretty tasty, a nice comfort meal. :) http://i245.photobucket.com/albums/g...ps863f6de8.jpg Thanks for looking! . |
