Have you tried grilling the avocado, too ? I love grilled avocado ( just season with EVOO, salt and Pepper) with some balsamic vinegar reduction and im sure it would be awesome on your tacos too.

Not as hot as I would have liked but it only got to marinade for an hour next time I will add more chipotle and marinade for 4 hours or so.
