Just got my hands on a 180gl dot tank and i am led to believe best way to go is an reverse flow by a few of the other smoker teams. I want two racks and a good way to control the smoke /fire rate . air vents for fire box and stack ? any and all help would be great

I would be cooking brisket/butts/ ribs /chicken basicly all that is needed for competing
