Taking the Bull out of Your beef

I see allot of threads through the year about, "where does this cut come from", "what's the difference between prime, choice& select, boasts of "miss marked grading", why is this cut more than another, "what is CAB:? Well old BluDawg is gonna fix all that. I found this series of 6 videos IMO are some of the best very well narrated, educational, and entertaining, The meat cutter is a True Artist! ( I developed a Man crush on him:oops:) Send the wife and clildrens out for some Ice cream, put out the cat, get a cold beer or fill you mug and sit back and enjoy the show I promise you will not be disappointed.

I watched all 6 and I have to agree. The guy doing the cutting is not a butcher...He is an artist.

I'd like to know what kind of knives he is using.

Thanks for posting.

Thanks just watched all 6. Made me think of my uncles and grandpa, they were butchers and had there own market.

I'm not a butcher but it looked like he was using a butcher knife, boning knife, and a saw mainly.

VERY sharp ones:laugh: The two I saw where a boning knife and a Scimitar I would bet they are most likely Dexter Russels.
