how much lump would you use in a uds on a boston butt vs brikett i usally plan on pound an hour

I fill the basket with lump and wood chunks, place some lit coals on top and let it roll. :cool:

Yup, that's the beauty of the UDS. You'll never waste charcoal. What you don't use this time, just reuse next time. Fill that sucker up!

It depends on how hot your cooking. I burn all Lump and and I use a 1/2 chimney of HEB briquettes to get it going( consistency is Key to a no head ache fire up) I do butts at 300 I'll use about 3 lb on a 9 lb butt done in 7 hrs.
