I know I am new here, but wants to spread the news!!!

I just did my first BBB and it came out so good I thought now is the time to make the leap into a pork belly!

Been wanting to do one for a few years now

Found a place not far from my work, they have them frozen in cyrovac for $2.99 / lb, I thought that was fair.

So here is my new baby, he is kind of wrinkled, you know how newborns are!!!

I will have some questions, hope you guys can help me out!!!

Looks like you are off to a good start. Now, don't be alarmed if you see a couple of nipples on there, it just proves you are in the right place.... :biggrin1:

Heck, all it will take is 8 or nine days to go from belly to this...

It weighs just over 10lbs

now I have to figure out what to do with it.

I would like to try to perfect my technique and try different things with it

I was thinking about cutting it into 2 lb slabs and vac sealing and freezing what I dont use right now and maybe do a dry brine on one, and a wet one on the other. I dont know about refreezing it though.

All I have done is the dry on the BBB, it came out fine but was a touch salty for me.
