Hanger Steak, Halibut, & Salmon!! Today was a GOOD day!!
Trimmed up the hanger, marinated in EVOO, lemon juice, Dale's, fresh ground pepper melange, teriyaki, and coke for 6 hours, smoked indirect for 15 minutes on apple and white oak. Then stacked the Wicked Good and let the fire rip nice and hot, spread out the coals and dropped the WGA grate on top for a wicked hot reverse sear; thanks for the GREAT idea LT72884! http://www.bbq-brethren.com/forum/sh...d.php?t=150517 . Rested with a nice pat of butter spread on it and commenced to KILL that steak!

Gave it some love with a Beurre Rouge sauce for good measure. The fish didn't make it out alive either! http://i255.photobucket.com/albums/h...psf221bb25.jpg HAPPY NEW YEARS FARKERS!!! |
