Chuck roast mistake
picked up a chuck roast by mistake instead of a chuck eye......what can i do to make this as good as possible.....???

Cook it like a brisket and shred/chop the meat. Use it for tacos, lettuce wraps, chili, whatever. It's delicious.

Season it up, cook it at your preferred heat until it probes tender, put it in a pan to collect the drippings, pull it and eat it. You can't go wrong with a chuck roast.

Bo's got it right. Cook it like a brisket, shred it like a butt/shoulder.

Get some crusty hard-rolls and send the mistake to me. I got the smoker all warmed and ready to go with a pan of broth, red onions and yellow bell peppers. No problem I can fix it.

There is a recipe for "pepper stout beef" in the Roadmap thread that is pretty darn good. Lots of people here have enjoyed that one.
