First cook today went with a smallish whole packer about 10 lbs. Trimmed her up a bit nothing yo fancy trying the Deep Beef for the first time little salt, pepper worchester pepper and Obie cues Brisket rub. Using the new Pit Pay app today great little tool. Got her up to temp 240 deg. Set her in as you can see a 20 lber will easily fit on these grates.It's been in about 3hrs now and going great this thing is rock steady one vent closed the other open about a 3rd or so. Ok she out looks like just about. 7hrs plenty of coal left didn't have to reload water either and the water pan was not all the way full. For a cheepy Excel brisket not half bad I am liking the deep beef also I will have to do some testing on a good brisket. This cooker is very easy to control with great cook times this is quickly becoming a favorite of mine. I will have six butts on it Christmas day stand by.
