This is the second time I've smoked my turkey on my ECB. I used Kingsford blue with a few fist sized chunks of Apple wood. I couldn't get the ECB to hold a temp any higher than 225 on my modified ECB, and this time I used the Smokey Joe Silver underneath the ECB instead of the stock fire bowl sitting on top of bricks. after 4 hours on the smoker, I finished her up on my gasser at about 325 for another hour. The turkey was tender and juicy, very delicious. Still saving my pennies for the WSM and looking forward to a smoke without the constant work that a $38.00 WallyMart ECB requires.
