I haven't done many racks of ribs, mostly because they weren't coming out very good on my cheapy off set smoker. That all changed when I found the Brethren!
I built a UDS and on only my fourth smoke on it, I can honestly say I made the best ribs I have ever had anywhere. Used the 321 method. Temps ran between 210-230 (mostly in the high 2-teens) No mustard. My own rub. In the foil I used a dab of butter and some real maple syrup. Finished with home made BBQ sauce. Pics don't do it justice...nice n juicey with a sweet smoke ring. |

Those look perfect, got to love the UDS.
I know how you feel being in So. Cal, I have yet to find a bbq joint that serves anything close to the stuff I make a home. Having said that, I am dying to try Ryan Chester's (The Rub Co.) new place "Smoqued", as I'm sure it will be fantastic |
