Side burner for custom Performer table
 
Hi Brethren. I'm in the process of building a good sized custom table cart with a concrete top to house my Performer. I want to add a large side burner which will swing away to store/nest under the table. I would like to use a large burner setup such as the Bayou Classic SP-1. This would be large enough to run my Little Black Egg pizza oven and handle any frying tasks that I would require. My question is, will this type of burner give me enough control to reduce the heat low enough to simmer a pot of chili or other lower heat needs I might have? I'm guessing that I'm probably asking too much from this setup. Anyone tried these burners for lower heats?

I've yet to see a turkey fryer type burner that simmers well.

In brewing beer I have found that there are some burners that will also do a simmer. The Bayou series has a banjo burner that does not sound like a jet engine and can come down to a simmer- Bayou Classic 16" banjo cooker
