I'm doing one now trying to get the temp up to 350 now it's stuck at 280 now, I'm going to wrap it and put it in a cooler for a hour on this brisket.

Edit UDS is at 300* brisket is at 70*

2 hours, fat side up

I'd like to do longer than 45 mins but everyone is always so darn hungry when the brisket gets done.

Smoothsmoke 10-19-2011 11:27 AM

I have trouble resting past 30-45 minutes. Just like Al said, too damn hungry to wait.

Trucky1008 10-19-2011 11:36 AM

Usually 3-4 hours.

JMSetzler 10-19-2011 11:41 AM

I try to target my cook so that I have at least two hours to rest it. If I end up with a little more or less, it still usually tastes pretty darned good :)

Yep. That happens at my house too.

Paulie 10-19-2011 11:45 AM

I've been resting mine for an hour on average, no complaints yet.

Groundhog66 10-19-2011 11:52 AM

I'm still resting one from early summer :heh:

I like to wrap in a foil, towel and cooler for at least an hour. I plan for a two hour rest as well, it just seems like it works out well for me.

Mister Bob 10-19-2011 12:23 PM

I aim for two hours, but that rarely happens. It's really a matter of when the brisket's done and when it's time to eat (or turn the box in).

J'ville Grill 10-19-2011 12:32 PM

I'd have a say 45 minutes also.

gtr 10-19-2011 12:37 PM

Depends on how tired it is.
