Didn't get started at the crack of dawn, but a bit earlier than planned, which is good - I've got 20 pounds of Pork Butt to get smoked today! :thumb:

I'll pop up some fresh pron here every so often.

Here they are a 7:30 when I got them on.
So looking forward to some good ole pulled pork!

Two hours in, the temps are calming down to where I want them.
Bark is starting to form up nicely.

I decided to double check the temps with my super-accurate, lightning-fast YELLOW Thermapen - I wasn't believing the probe temps. Well, they are still a bit further along than I expected, but are about 10* lower than the probes are reporting. Always a good idea to check a few locations in those big butts.

Great looking butts. Smoking butts must be in the air in Cali, I got 30# in the smoker as well. Mine are about 18 hours in right now. just about ready to come off:becky:

Love this new house though - I can see my smoker from the kitchen so don't have to babysit as much as I used to. It is a LOT nicer in the house right now, that's for sure!
