So, the colonel got this song stuck in my head...


...and I just so happened to have a Beef Ragu Sammich...

Oh great, almighty and all knowing, yet kind hearted and loving moderator who is also really sexy and built like a tank, please accept this as my entry into this Throwdown!:becky:

For this Throwdown, I figured I would make some sort of sandwich and top it with a jar of sauce, probably Ragu. But then I remembered how much CD hates sauces from a jar, so I set out to make my own Ragu.

This Ragu is inspired by the famous Pepper Stout Beef recipe, and is something I thought sounded like a good enough idea to try.

It started with some Chuck Roast.

Seasoned with Foil Hat Rub and Black Pepper.

When the chucks hit 165 internal...

I took a pan with some Carrot, Onion, Celery, Garlic, Mushroom, Basil, Thyme, Rosemary and Parsley...

I squished up some tomatoes into that...

I added some Beef Broth...

I topped the pan with Chuck...

Covered with foil and put it back on the WSM to cook until it was pullable.

When the meat was pullable I removed the meat from the pan and pulled it...

Then I blended up the liquid and vegetables with a quick pulse to leave it just a smidge chunky, and added a can of Tomato Paste because I felt it needed more tomato flavor. I added that liquid back to the pan and put it on the WSM uncovered to thicken and reduce the sauce.

This is a Throwdown Entry (Do I still have to do this?)

My inspiration for this throw down is the song Rubber Biscuit by The Blues Brothers.


Back in the mid 90's I was working in the Chicago area for the market leader in video conferencing, PictureTel. I got a call from a local contractor who was building the new House of Blues in downtown Chicago. HOB was a Picturetel customer and used our video CODECs (Compression/DEComperssion) to send remote feeds from one HOB to the others for special events. For the Chicago club they had a concept of putting our new compact video conferencing systems above the bar and allowing customers to talk to customers at the other HOBs. He wanted me to come to the site and make sure that the concept would work and offer design advice. I went and they went ahead with the idea.

A few months later I got a call letting me know that I would be getting 10 VIP passes to the private grand opening party. I invited my boss (of course) and some coworkers and their spouses and Parsley Lady and I went, of course. There are all sort of local celebrities there and they held a special concert that included some of the biggest names in blues and rock including Joe Walsh, Lonne Brooks, Magic Slim and the Teardrops and, of course, The Blues Brothers.

This was after John Belushi's death so the Blues Brothers included Jim Belushi and also included Letterman bandleader Paul Shaffer. They played Rubber Biscuit that night.

So... flash forward to today :-D I thought about making a "wish sandwich", but that was boring. So, since I made a couple of naked fatties in my PBC last night...

and I enjoy slices of fatty on a biscuit, I decided to make biscuits.

I have been know to make biscuits that are like hockey pucks (which, of course, are made of rubber), it seemed to fit my inspiration :-D

I tried a new recipe that was lighter. It used margarine instead of butter and shortening and low fat yogurt instead of buttermilk. they didn't rise as much as normal, but they were light and fluffy inside and tasted great.

Once they were done I took a couple of fatty slices and heated them on in a hot skillet and put them on a hot biscuit and topped it with some apple habanero jelly from Texas Pepper Jelly...
